Hereford Chili Soup
Ingredients:
- 1 kg Hereford beef, 90/10
- 4 oz canned tomatoes (400g)
- 2 oz canned beans (400g)
- 500 ml bone broth
- 1 large carrot
- 2 bell peppers
- 2 onions
- 6 garlic cloves
- 4 tablespoons tomato paste
- 50g chipotle peppers
- Hot sauce
- Salt, sugar, pepper
Preparation:
- In a pot, sauté chopped onions and grated carrots.
- Once the onions become translucent, add ground beef.
- Sauté and add canned tomatoes, tomato paste, finely chopped bell peppers.
- Cook it all together and then add beans, broth, salt, pepper, and sugar.
- Press garlic cloves through a garlic press.
- Adjust the taste by adding chipotle peppers and hot sauce.
- Simmer for approximately 20 minutes.
Serve with Greek yogurt, Parmesan cheese, and herbs.
It's preferable to serve with toasted bread or corn tortilla chips.
